Production steps:
Step 1: remove the butter from the refrigerator and dice it without softening.
Step 2: add the sifted medium gluten flour, sugar and salt.
Step 3: rub it with your hands to make it as coarse as sand. There should be no big butter in it.
Step 4: add the egg liquid and mix it into a ball (add the egg liquid according to the situation and just mix it into a ball).
Step 5: put it in a fresh-keeping bag (or wrapped with plastic wrap), and refrigerate for 15 minutes.

Low fat milk: 175ml
Note: the tarts made of medium gluten flour will taste harder. If you like soft tarts, you can use half of medium gluten flour and half of low gluten flour (although you haven't tried, I think if you use all low gluten flour, the taste will be very soft)
