Homemade chili oil
Introduction:
"This kind of hot pepper is oily but not very spicy. I like to eat some spicy food, but it can't be too spicy. It's worth trying. It's very suitable to dip in dumplings, mix cold dishes and make clear oil. "
Production steps:
Step 1: shredded pepper, cooked peanuts, and cooked white sesame (no shredded pepper, you can grind it by yourself with dry pepper. The degree of grinding can be based on your preference, or you can grind it into chili noodles. I have both cooked peanuts and sesame at home. If you don't have any, you can buy raw ones and fry them yourself).
Step 2: Ingredients: a few Chinese prickly ash, 1 star anise, 2 fragrant leaves, a piece of chive (or a small section of scallion), 2 pieces of ginger, two cloves of garlic, a little salt, a little chicken essence, a little vegetable oil, and an appropriate amount of water.
Step 3: put some water and salt into the shredded pepper, mix well, the amount of water does not need to be too much, as long as you can mix the amount of shredded pepper. Put some water is conducive to capsanthin exudation in pepper, and not easy to fry paste pepper, oil color is also clear.
Step 4: pack the peanuts in a bag and crush them with a rolling pin. I didn't use the grinder. The main reason is that the quantity is too small. First, the rolling pin can be made, and second, the cleaning is saved.
Step 5: pour vegetable oil or salad oil into the pot and heat it to 40-50% heat. Change to low heat. First add pepper, star anise and fragrant leaves and fry them over low heat for 2-3 minutes. Then remove.
Step 6: take out the pepper, star anise, fragrant leaves, and then add onion, garlic, ginger, deep fry for 2-3 minutes, then take out, all with low heat.
Step 7: add white sesame and peanuts, fry for 2-3 minutes, then pour in chopped pepper.
Step 8: simmer over low heat until the water evaporates.
