Introduction:
"Wife cake has a beautiful legend. Once upon a time, there was a loving couple whose daughter-in-law was willing to sell herself to cure the family. The husband who lost his wife was not discouraged. He worked hard to develop a delicious cake. Finally, he redeemed his wife by selling the cake and lived a happy life again. This method of making delicious food has been handed down to the present day and is known as "wife cake."
Production steps:
Step 1: heat 20g sugar, 20g honey and 40g butter until completely melted.
Step 2: pour in 200g low gluten flour and water.
Step 3: mix 120g low flour with 60ml corn oil.
Step 4: knead into smooth water oil skin and pastry respectively.
Step 5: divide the water oil skin and the pastry into 10 equal parts.
Step 6: make mung bean stuffing: soak mung bean in water for 2 hours, boil and blossom, then stir until water is dry, add 20g sugar and mix well.
Step 7: roll out one portion of the water and oil crust and wrap in one portion of the pastry.
Step 8: close the mouth tightly.
Step 9: roll it into an oval shape.
Step 10: fold both sides in the middle.
Step 11: roll it into a rectangle.
Step 12: fold the long sides in the middle, repeat steps 9-12 twice.
Step 13: roll out the dough after three fold twice, and put the bean paste stuffing in the middle.
Step 14: brush a layer of egg liquid on the surface, bake at 200 ℃ for 10 minutes and take out.
Step 15: brush the whole egg liquid again.
Step 16: put in the oven again at 200 ℃ for 10 minutes.

Note: the outer layer of wife cake is all made by wrapping the pastry with oily skin, then repeatedly stacking and flattening to achieve the effect of pastry. However, the stuffing is rich and diverse, which can be created according to personal preferences. Today, I made mung bean stuffing to reduce the infinite guilt that the outer layer of pastry brings to me in weight loss. There is also the traditional pastry is made with lard, because there is no lard at home, I use butter instead.
