Production steps:
Step 1: soak the beef in water and squeeze out the blood.
Cut all the main materials into pieces, soak the mushrooms and fungus, and whether you want to cut depends on your taste. If you like to eat large pieces, you don't have to cut them.
Cut scallion into sections, peel garlic and slice ginger.
Save the water for the mushrooms and fungus.
Step 2: add proper amount of soy sauce and cooking wine to beef, add onion, ginger and garlic, marinate for a while, and then pick out onion, ginger and garlic from the inside.
Step 3: heat up the oil, add bean paste, onion, ginger, garlic and water, add sugar to taste, mix well and serve in a bowl.
Step 4: can be another pot, into the right amount of oil, heat, add dried pepper stir fry. When fragrant, pour in the beef and stir fry together.
Step 5: after the beef is juiced, stir fry the potatoes together for a while, then add the mushroom water and let the potatoes boil for a while. Then add XO material and blend it into the soup.
The main purpose of XO ingredient is to increase the flavor of beef.
Step 6: put in the fungus and mushroom, stir, cook a little, then add water, and then cook again. Pour in the fried bean paste, mix well with the ingredients, add star anise, cover the pot and simmer.
If there is enough water for the mushrooms before, there is no need to add it.
Step 7: in the process of stewing, you can roll the materials to make them taste more evenly. If the taste is not enough, add a small amount of soy sauce to taste. Whether to start the pot depends on whether the potatoes are soft and tasty. Whether the beef has reached the ideal taste.

It can be seen from the finished product picture that there is little soup, because I put less water. But the taste is not bad. It's a pity that there is no soup.
