Production steps:
Step 1: add sesame oil to pork stuffing (add more, sauerkraut is very oily), cooking wine, soy sauce, ginger powder (my family does not eat ginger, I squeeze some ginger juice to add), pepper
Step 2: stir along one direction with chopsticks. If you like to eat more soup, you can add proper amount of soup in batches in the process of stirring
Step 3: the packaged northeast sauerkraut bought in the supermarket
Step 4: cut pickled cabbage into shreds first, then soak it in water for a while, take it out and squeeze out the water
Step 5: chop the pickled cabbage with water and chop the green onion
Step 6: add sauerkraut and scallion to the minced meat
Step 7: stir well (if you don't feel moist enough, you can refuel)
Step 8: add a pinch of salt to the flour
Step 9: mix with cold water to make a smooth dough and let it stand for a while
Step 10: take out the dough, knead it well, and pull it into a small dosage (the dosage for steaming dumplings is a little bigger, about twice that of ordinary dumplings. If you want to make dumplings, the dosage can be smaller. I just made steamed dumplings. I didn't want to wash another pot. I just made steamed dumplings.)
Step 11: knead the dumpling into a circle, roll it into a dumpling skin, and put in the right amount of stuffing
Step 12: make the pleats
Step 13: spread gauze on the steaming tray, boil the water in the steamer, put the dumplings in the steaming tray and steam for 8-10 minutes
Step 14: steamed dumplings can be eaten directly or dipped in ingredients. I used vinegar + soy sauce + sesame oil. According to my personal taste, I can also add chili sauce, satcha sauce, sesame sauce and so on
