Production steps:
Step 1: take the chicken feet out of the refrigerator and soak them in water to thaw. At the same time, they can also soak blood (I soaked for about half an hour)
Step 2: cut off the toenails of the soaked chicken feet, chop them into small pieces and clean them again
The third step: Boil the water in the pot, add the chicken feet into the processed chicken, add a teaspoon of salt, an anise, a few grains of pepper, and boil a little baijiu.
Step 4: there will be foam in the process of cooking. Skim the foam while cooking (or not, but I always think skimming should make the chicken feet smell more)
Step 5: cook over high heat for about four to five minutes until the chicken is ripe (chopsticks can penetrate chicken feet)
Step 6: take out the cooked chicken feet and wash off the grease (one chicken foot is of different colors. I cooked it together in order not to discriminate against it, hehe)
Step 7: put the grease removed chicken feet in the basin, turn on the tap and rinse them with water for at least half an hour (if you don't like the water, you can extend the time, one hour or two hours)
Step 8: continue to put the washed chicken feet in the basin, and add the water without chicken feet for about two hours (I changed the water many times during the brewing, and added ice in the water for the last time. Of course, if I washed with water for two hours, I don't need to soak.)
Step 9: take a fresh-keeping box or container without oil and raw water, add proper amount of boiling water into it, add more than ten Chinese prickly ash to make a fragrance and cool it for use (you can also add some spicy millet at the same time)
Step 10: This is Xiaomi hot. I bought a big bag for more pickled pepper water
Step 11: after the pepper water is cooled, add the spicy millet into the pepper water, ginger slices into the container, and all the water in the spicy millet bag into the container. If you like spicy, you can cut the spicy millet into pieces, which are more tasty. I just cut a few. I've heard that you should not cut the pickled pepper into pieces. I don't know why, but there are many people who cut it into pieces. For me who love spicy, cutting is the best way It's the best choice (the xiaomila in the picture is only half, and I've added a lot later)
Step 12: add the pickled chicken feet. (I know there can't be raw water in the pickle and the container of pickled chicken feet, but I use raw water when I soak and wash chicken feet. I don't know whether to dry the water or not, and how to dry the water completely? But then the chicken feet would not look good, so finally I washed the chicken feet with cold boiled water, and did not completely dry the water, so I washed the chicken feet with cold boiled water and directly added them to the container). The water in the container should not be more than all the chicken feet. If not, I mixed the right amount of cold boiled water, white vinegar and salt into pickled pepper water and added it to the container. My pickled pepper water is still a little bit short, In the end, I tried to make the pickled pepper water very salty, so I didn't add any salt
Step 13: cover the chicken feet with pickled peppers and refrigerate them for more than five hours (turn them over to make them taste well)
