Raw materials for making fish maw
200g fish maw with water. Ingredients: 100g minced fish, 3 Shuifa mushrooms, 25g horseshoe, 75g cooked ham, 14 peas, 5g Shuifa Nostoc, 5g cooked ham, 5g rape.
Ingredients for making fish maw
15 g cooking wine, 1.5 g refined salt, 2 egg white, 400 g clear soup, 20 g wet corn flour, 2.5 g flour, a little cooked lard, 10 g chicken oil.
Steps of making fish maw
1. Change the fish maw into 14 pieces (1 inch and 2 minutes in diameter), boil it twice with boiling water, and simmer it with 200g clear soup for 5 to 6 minutes.
2. put the egg white in the pan and use chopsticks to pick it up, showing a snow-white foam. Put the minced fish into the pot, add a little cooking wine, refined salt, cooked lard and wet corn flour, stir hard, add egg white, and mix well to make a thick paste. Chop the horseshoe into powder, put it into the mashed fish paste and mix well.
3. Cut the mushrooms into 28 1-inch-2-minute-long and 1-minute-wide strips. Cut the ham into 56 6-minute-long diamond slices, and chop the rest into minced ham. Squeeze the minced fish paste into fish balls about 8 minutes in diameter and put them on the fish belly. Put two pieces of mushrooms (semicircle shape) and four slices of ham on the fish ball symmetrically to make it into the shape of ancient coin. Put a pea in the middle. Decorate the outside of the mushrooms with a little ham and rape. Decorate the outside of the ham with a little Nostoc flagelliforme. According to this method, 14 pieces of money were made. Then steam the drawer, take it out and stack it on another plate.
4. Pour 200g clear soup into the pot, add cooking wine and refined salt, bring to a boil, skim the foam, dilute the corn flour with water, pour into the pot, thicken, pour chicken oil, and pour on the fish maw.
