Chicken with Three Cups Sauce
Sanbei chicken is a famous local traditional dish in Jiangxi Province. It is said that it is related to the national hero Wen Tianxiang. Because cooking without soup, only with a cup of rice wine, lard or tea oil, soy sauce, so named.
This dish is usually made of Sanhuang chicken and other ingredients. After it is finished, the meat has strong flavor, salty in sweet and fresh in salty. It tastes flexible and chewy.
Sanbei chicken originated in Jiangxi Province and later spread to Taiwan Province, becoming a representative dish of Taiwan cuisine. Among them, Ningdu Sanbei chicken, Nanchang Sanbei chicken and Wanzai Sanbei chicken are the most famous and representative in Jiangxi Province.
In September 2018, it was rated as one of the top ten classic dishes in Jiangxi Province.
History of dishes
Sanbei chicken is a famous traditional dish in Ningdu, Jiangxi Province. Its origin is related to the national hero Wen Tianxiang. It is a classic production of Jiangxi cuisine. Three cups of chicken is red in color and sauce, original in flavor and color.
At the end of the Southern Song Dynasty, the national hero Wen Tianxiang was captured. When Wen Tianxiang was about to be killed, a wife in Jiangxi province brought a chicken and a pot of wine to visit him in prison. With the help of a fellow jailer, the old woman met Wen Tianxiang. She picked up the chicken and cut it into pieces. She poured three cups of rice wine into a tile bowl and simmered it over low heat. An hour later, they brought the chicken to Wen Tianxiang. He ate the last meal with the hatred of national subjugation. After returning to his hometown of Ningdu, Jiangxi Province, the gaoler used this dish to commemorate Wen Tianxiang every memorial day. Later, the chef changed three cups of wine into one cup of sweet wine, one cup of soy sauce and one cup of lard, and used Ningdu yellow chicken, a specialty of Ningdu in Jiangxi Province, as raw material. This is the famous three cups of chicken. In 2008, this dish was also included in the main menu of the Olympic Games.

It is said that a long time ago, Ningdu had a child whose father died early and whose mother depended on each other. One day, my mother was seriously ill, lying in bed for a long time, dying. For the sake of filial piety, the son went out to try to get a hen for his mother. He put the chicken into a broken bowl and asked his neighbor for a cup of rice wine, a handful of salt and a spoonful of oil. After stewing with charcoal fire, he fed it to his mother. Unexpectedly, the aroma overflowed, which attracted an official chef next door. He tasted a piece and found it delicious. Later, the official chef continued to improve the production method, cooking chicken with a cup of sesame oil, a cup of soy sauce and a cup of rice wine, and named it "three cups of chicken".

It is said that hundreds of years ago, there was a farmer's family in the suburb of Kangle Town, Wanzai county. When the weather was dry and the people were in dire straits, he had to let his younger brother go out to make a living. In order to bid farewell to my brother, my sister killed the only tender three yellow chicken in the family, cleaned it, chopped it into small pieces and put it into a small sand pot to stew together with the chicken viscera. Because the family was poor and there was no seasoning, they put some sweet wine, soy sauce, lard, ginger and so on, and then put them on a firewood stove to stew. After a while, the smell of chicken overflowed, and the taste was very beautiful. After that, my brother, who was out to make a living, came to a restaurant in Ningdu County, Jiangxi Province to help cook. Because of his diligence and honesty, he was favored by the shopkeeper and recruited as his son-in-law. Later, because she was worried about her lonely sister in her hometown, she went back to visit her hometown with the consent of her wife and parents in law. As soon as I arrived at my hometown, I saw that my sister's poor life was hard to sustain, so I packed some luggage to pick her up. The younger brother always remembers the delicious chicken dish he ate when he left home, so he asked his elder sister to cook it again to enjoy the guests. One of the guests is a chef working in the government. Seeing the unique flavor of this dish, I asked about the method and the name of the dish. My sister called it "three cups of chicken" because she put three cups of seasonings. Since then, my sister and brother often used this dish in restaurants. Practice 5
