Langjiu

Brewing technology

Gulin County, Sichuan Province, located in the north of the western section of Dalou mountain, belongs to the low and middle mountain geomorphic type area in the mountainous area around the basin. Lang distillery is located in Erlang Town, Gulin County, Sichuan Province, in the middle reaches of Chishui River. It is 45 km away from the county town in the West and only 40 km away from Maotai village, Guizhou Province, which is across the river from the upstream. Erlang town is surrounded by mountains and rivers. The ladder shaped street is made of bluestones. Shops on both sides of the street lead directly to the ferry of Erlang beach on the river side. The waterway can lead to boats. The climate here is warm and humid, and the soil is yellow and red. It is rich in high-quality red sorghum, which is called "Gulin Sorghum" or "Local Sorghum" by the local people. At the same time, it is also rich in wheat used in making koji of Langjiu, with rich raw materials for liquor making. Temperature is conducive to the reproduction of molds, yeasts and other wine making microorganisms, which has excellent objective natural conditions for wine making.
Lang Liquor is brewed with Longdong mountain spring water, Lang spring water. After testing by relevant departments, the results show that the natural Longdong mountain spring water from the mountain below 1000 meters is natural high-quality mineral water, transparent and tasteless, moderate pH value, low hardness, rich in minerals: calcium, magnesium, potassium, sodium, metasilicic acid, etc., which is an excellent mineral water and brewing water.
Tianbao cave and Tianbao cave, which store Baijiu, are the largest liquor storehouses in the world. The cave is warm in winter and cool in summer. The constant temperature of 19-21 ℃ is maintained throughout the year. Storing wine in the cave is conducive to the alcoholization of the wine body. The volatile wine molecules adhere to the cave wall and form a thick wine moss over time. This is not only conducive to the reproduction of wine bacteria, but also accelerate the aging of new wine.

In the sixth year of Jianyuan (135 BC), Emperor Wu of Han Dynasty designated "Goujiang wine" produced in erlangtan as tribute wine.
During the Northern Song Dynasty, the indigenous people of Gulin began to make wine with Lang spring water, which is known as "Fengqu wine".
In the Ming Dynasty, the "sand returning process" of liquor making appeared along the Chishui River. In the Qing Dynasty, Erlang town had more than 20 large and small wine shops and grains, and hundreds of wine takers and wine workers, besides producing famous "Phoenix tune liquor", also brewed various kinds of liquor, Baijiu, wine and miscellaneous grains wine, which supplied local residents with drinking.
In 1745, the governor of Guizhou Province Zhang Guangsi expanded the channel of salt transportation and dredged the Chishui River. The length of Chishui River is 540 km from tianguyan near Chishui River Farm in the upper reaches to ape rock in the lower reaches (now yuanhouchang, Chishui county). After ten years of dredging in Qianlong period, the rest of the river reaches can be navigable except for the section of erlangtankou up to more than 30 Li between masangping. From then on, Zigong Jingyan boat from Sichuan Province to Guizhou Province could go straight up the Yangtze River through Luzhou, Hejiang and taipingdu to erlangtan transfer station. With the transportation of Sichuan salt, some merchants began to trade salt, wine, cloth, general merchandise, timber, mountain goods and other local products with erlangtan as the center. Erlangtan in the middle reaches of the Chishui River has gradually become a lively riverside wharf and commodity distribution center. In the past, the small mountain village at erlangtan has become a big market town with dense people. From the middle of the 18th century to the beginning of the 19th century, Erlang town was full of business firms, wine shops and salt shops. The town has a population of three to four thousand people. There are nearly 30 big, medium and small salt companies, and no less than 2000 people carry their husbands to cross the mountain every day. There are also peddlers and salt boats who come and go all day long. It is the frequent transportation of salt industry that promotes the economic prosperity on both sides of Chishui River, brings the development and prosperity of local liquor making industry, and creates good conditions for the birth of Langjiu.
In 1898, Deng Huichuan, a Rongchang businessman, came to Erlang town with his family and set up "Xuzhi distillery" in Erlang town. The liquor produced is mellow and refreshing. In 1907, Deng Huichuan changed the name of Xuzhi distillery to Huichuan Zaofang. Zhang Zixing, a master of rongbi distillery, one of the forerunners of Guizhou Maotai distillery, was employed to brew a Maotai flavor Liquor Based on the original "Fengqu method liquor" by using Maotai liquor technology and adding a variety of herbs to the starter It was named "huishalang liquor". Because of its similar style with Maotai liquor, it had a strong aroma at the beginning and a stronger sauce flavor at the entrance, and gained a great reputation. This is the predecessor of Langjiu.
In 1933, Lei Shaoqing and other businessmen jointly set up "Jiyi new dross shop". Zheng yin'an, an early winery in Maotai Town, was employed as the chief technician. Mo Shao, the chief winemaker of Huichuan dross shop, brewed a kind of Maotai flavor liquor with coke aroma, ester aroma, mellow aroma and slightly strong aroma This wine is brewed with the beautiful legend of Lang spring water, named "Lang wine".
According to Sichuan Economic annals, Lang Liquor was expensive at that time because of its high quality and good taste, with an annual output of less than 40-50 tons. "One kilo of Lang Liquor in a can is worth one yuan in Chongqing, Chengdu and other places, compared with the local price in the year of the anti Japanese war."
In 1956, at the jinniuba conference in Chengdu, Premier Zhou Enlai said, "there is another Langjiu in Sichuan, which was very famous before liberation. We should speed up its development." At that time, the state-owned gulinlang distillery in Sichuan Province was established.
Baijiu Baijiu liquor, the 39 degree Maotai flavor liquor, was used as the standard sample liquor of People's Republic of China Maotai flavor liquor in 1999. It became the standard of Maotai flavor liquor in China.
In 2011, the brand value of Langjiu reached 17.555 billion yuan, ranking 51st in China's top 500.
