Corporate history
Dong liquor is produced in Zunyi, a famous historical and cultural city and wine culture city in northern Guizhou.
Zunyi is famous not only for the turning point of Chinese revolution, but also for the town of wine making. The history of wine making here is very long. According to the archaeological relics, as early as the Paleolithic age, there was human labor in Zunyi area 10000 or 200000 years ago. In the practice of fighting against nature, primitive human gradually discovered the natural fermentation of sweet wild flowers and fruits, and the original ape wine in ancient times appeared. In the Wei, Jin, and Northern and Southern Dynasties, the wine making industry here became prosperous, and the "Za wine" made from coarse cereals appeared. According to the records of "Dongxi Xianzhi", rice weed seeds are used to make rice weed seeds, and fire is used to make rice weed seeds It can be seen that the ancients used "natural plants (materia medica) to participate in wine making" at that time.
The ancient Yongtao poem said: "since I came to Chengdu to cook wine, I don't want to go to Chang'an.". At that time, the Zunyi area was under the jurisdiction of Sichuan, and its economy and culture were closely linked with Shu. The distilled "Shaojiu" also appeared. In 1104 ad, when Huang Tingjian, a famous poet, took office in Zhizhou, the border of Guizhou and Guangxi, he once drank three pots of "wine" with his friends, and thought that "every wine can be drunk". At the time of yuan and Ming Dynasty, the literature contained the method of liquor making in Yunnan and Guizhou. After distillation, one third of the "liquor with bad quality" could be obtained.
In the late 16th century, Zunyi experienced the "Pingbo war" and ended the Tusi rule. After the end of the war, many officers and soldiers from the mainland settled here and became naturalized. The production of Xiaoqu liquor in Guizhou developed rapidly. In the early years of the reign of Emperor Kangxi of the Qing Dynasty, there were more than ten wine making workshops in the area less than 10 kilometers from Donggong temple to Gaoping, and five or six in Donggong temple and liujiaba. Among these wine making workshops, the most outstanding one is Xiaoqu liquor, which has been making wine for generations.
After Donggong temple area of the ancestors continue to collect folk wine, koji making formula for research, improvement, and generations of Dong wine brewing technology and formula inheritance, continuous summary, induction and evolution continuation, finally formed the koji making "baicaodan" and Daqu making "Xiangdan". In the production of Xiaoqu "Bai Cao Shan" and "Daqu" in Daqu, the 130 kinds of herbs, which contain the spirit of heaven and earth and the essence of sun and moon, have enriched the connotation of Dong wine, and also given the balance and coordination mechanism of Dong wine.
During the Anti Japanese War, Zhejiang University moved to Zunyi. The professors came to Donggong temple to learn about the brewing technology and formula of Dongjiu, and after drinking Dongjiu, they were full of praise. According to the professors, this wine is a kind of wine with more than 130 kinds of Materia Medica involved in koji making. It is the inheritor of the true origin of wine making with "the same origin of medicine and food" and "the same origin of wine and medicine". The word "Dong" consists of "Jiao" and "Zhong", and "Jiao" and "Cao" agree that "Zhong" means a large number, so the word "Dong" implies "Bai Cao". At the same time, this wine is produced in low latitude plateau, no severe cold in winter, no intense heat in summer, dense vegetation, and sweet spring water. With unique brewing technology, koji making formula and aroma components, it fully embodies the idea of harmony between man and nature and makes it the most perfect wine. The word "Dong" in the book of songs of Chu, wading the river, means orthodox, Orthodox, upright, dignified and dignified. There is a legendary coincidence between the cultural connotation of "Dong" and that of Dongjiu. Then, the professors proposed to name the wine "Dong wine", hoping that Dong wine will continue to uphold the true meaning of human wine making of "medicine and food have the same origin" and "wine and medicine have the same origin", and inherit and carry forward the "wine of hundred herbs". From then on, Dongjiu was named and became famous throughout the country.
In 1935, when the red army passed through Zunyi twice during the 25000 mile long march, the officers and men of the Red Army once tasted Dong Jiu, experienced the charm of Dong Jiu, relieved the Red Army's fatigue and healed its wounds, and took Dong Jiu on the Long March, leaving many beautiful and moving stories of Dong Jiu
