The pine nuts used by Shangyi winery are picked from the ancient tombs in Badachu, Xishan, Beijing. The juniper seeds grow everywhere. Their leaves have two, five and seven moustaches. Shangyi winery makes gin by soaking and distilling juniper nut to make natural flavor, which is a way to take its flavor but not its color. In this factory, the seeds of juniper were screened, crushed and immersed in the treated alcohol, soaked for four months at room temperature, stirred regularly, and then distilled to obtain the required flavor. Shangyi winery made a pot type distilling pot with copper plate. The pot is distilled by direct fire with large evaporation area. A simple reflux device is installed on the pot, and the reflux device is connected with a snake flow cooling pipe to obtain spices after cooling. The cooling head is installed on the cooling pipe, which helps to increase the content of components in the distillate and highlight the flavor of juniper. When distilling, the head and tail of liquor should be strictly controlled, and the mid stream liquor should be selected by sections. Finally, the head and tail of liquor should be distilled twice. In this way, the quality of the spice liquor obtained is pure, which makes the gin taste mellow, endless aftertaste, delicate and harmonious. Finally, it is blended with the treated alcohol. The storage period is six months and it is bottled for sale. At that time, the wine was welcomed by the foreign wine industry, solved the problem of gin import, and soon became the main product of Beijing Hotel and Liuguo Hotel blending cocktails.
The golden wine's peak sales period was in 1946, especially among the Americans who came to China. Some of them were brought back to the United States, which was unexpected.
