Production technology
1. Process tips
1. Cleaning method of pork tripe: scrape the mucus from the outer layer of raw pork tripe with a blunt knife, cut it open, scrape the mucus again, scald it with hot water once, and then rub it with coarse salt, vinegar, scallion and ginger to remove the fishy smell.
