Raw materials for making Sydney elbow stick:
There are 2 elbow sticks (about 1.5kg), 500g xueya pear, 100g vegetable oil, 5g monosodium glutamate, 50g sugar, 7g salt, 10g ginger slices, 15g cooking wine and 3 scallions.
Steps of making Sydney elbow stick:
1. Scrape the skin of the elbow stick clean, break the bone exposed on the outside of the meat, then tighten it with boiling water, take it out and wash it. Peel and core the pear, cut it into pieces and soak it in cold water.
2. Heat the vegetable oil with a frying spoon, add sugar (25g), monosodium glutamate, salt, cooking wine, and put the elbow stick in. After the soup is boiled, skim the foam and simmer for 2 hours. Production process
