Raw materials for making Sixi pills:
Pig fat, lean meat (1:4) 500g, mushroom 10g, bamboo shoots 10g, eggs 100g. 10 g green onion, 10 g ginger, 15 g soy sauce, 20 g Shaojiu, 15 g refined salt, 5 g prickly ash, 5 g star anise, 15 g monosodium glutamate, 25 g wet starch and 25 g peanut oil.
The production steps of Sixi pill are as follows:
1. Cut the pig fat into 0.3cm dice, chop the lean meat into small pieces, put it into a bowl, add egg, onion and ginger, wet starch, soy sauce and Shaojiu, mix well, and make four balls of the same size.
2. Wash the mushrooms and bamboo shoots and cut them into slices. Add peanut oil in the frying pan. Heat them over medium heat for 60% heat (about 150 ℃). Add the meatballs and fry them until golden. Remove. Add soy sauce, Shaoxing wine, Chinese prickly ash, star anise and clear soup into a bowl, steam for 30 minutes with high heat, take out and put into a large plate. Pour the original soup into the pot, add bamboo shoots and mushrooms, bring to a boil over high heat, add monosodium glutamate and scallion oil, mix well, thicken with wet starch, and pour on the balls.
