Processing steps of fried quail:
1. Wash the quail and chop it into 3 cm long and 1.5 cm wide pieces. Cut the slices of Yulan, lettuce and Shuifa mushroom into pieces. Grasp quail pieces with wet starch and set aside.
2. Mix soy sauce, cooking wine, Zanthoxylum water, vinegar, monosodium glutamate, chicken soup and wet starch to make sauce.
3. Heat the frying pan and pour in the soybean oil. When it is 60% hot, put the quail into the pan one by one. When it is golden, take it out and drain the oil.
4. Leave 30g of oil in the frying pan, heat it up, stir fry the minced green onion and ginger, stir fry the slices of Magnolia, mushrooms and lettuce, pour in the fried quail pieces, cook in the sauce, pour in sesame oil and sprinkle the roasted sesame.
