Step 2: select the "dough" file, the whole process 1 hour 30 minutes. First put all the ingredients except butter into the bucket, and start to stir. About 5-6 minutes, the dough is smooth
Step 3: turn off the power temporarily, cut the softened butter into small pieces, put it into the bucket, and continue to turn on the power (the dough will continue to stir). The power can be turned off several times, and the dough will become smooth after stirring. It takes about 15 minutes, just before the procedure stops stirring (the remaining 110 minutes is fermentation time). At this time, the dough can be pulled out of the film, if there are small holes, the edge of the hole is smooth. Let the program continue to start fermentation (first fermentation).
Step 4: if the dough still sticks to the hand and can't pull out the film after the mixing time (20 minutes), you can select the "dough" position again and stir again, but it shouldn't take too long. After mixing in the middle, take out the dough and let the stirring rod idle in the barrel to finish the mixing time. When the fermentation time comes (the stirring rod stops and can be taken out), put the dough in for fermentation.
Step 5: after the fermentation is completed according to the procedure, it can be placed for another 10-15 minutes to continue the fermentation, but the fermentation volume of dough can be observed, such as 2.5-3 times. Poke a hole in the dough with your index finger, and it's done without collapsing or shrinking. (forgot to pat the dough)
Step 6: take out the dough from the bucket, divide it into two groups, roll it round, cover it with plastic film and let it stand for 10 minutes. Then use a rolling pin to roll the skin from the middle to the back, about 25 cm long and 10 cm wide. The reason why the dough can be rolled over in the middle is that the dough is flexible. If it can't be opened, let it stand for a while.
Step 7: after rolling, spread the stuffing, press it flat, roll it up from top to bottom, and pinch the joint tightly.
Step 8: place two long coils on both sides of the central shaft column in the barrel. Carry out secondary fermentation (remember: delicious bread must have secondary fermentation). You can put the program into the baking position for heating, but it only takes 8 or 9 seconds. When you feel about 40 degrees with your hand, turn off the power immediately, and put the barrel in for fermentation (you can use plastic wrap to cover the mouth of the barrel). Ferment for about 60 minutes, and heat for 2 or 3 times (take out the barrel for short time each time). But if it's summer, you don't need to heat it up. Just ferment naturally until the volume increases.
Step 9: after fermentation to more than 2.5 times, you can bake, directly select the baking gear to start. Before baking, you can brush the egg yolk on the bread surface (add a little water to rinse the egg yolk), and the color is good after baking. Note: observe the baking color after selecting the baking gear. The whole time of this gear is 1 hour, but it took me about 35 minutes. You can use chopsticks to insert bread is not sticky, another baked, naturally see bread and barrel some separation. After baking, put it out of the barrel.
Step 10: after cooling, slicing becomes delicious bread. Take a look at the softness of homemade bread. The key is that there are no additives (bread improver, etc.).
