Boshan tofu box
Introduction:
"Boshan tofu box is a famous dish of Shandong cuisine. It is said that after Emperor Qianlong tasted this dish in Boshan, he had different opinions and was one of the four famous dishes in Boshan (tofu box, clear boiled meatballs, crisp fried spring rolls and crisp fish pot). Bean curd is cool and sweet in nature. It belongs to spleen, stomach and large intestine meridians. It contains iron, calcium, phosphorus, magnesium and other trace elements necessary for human body. It also contains sugar, vegetable oil and rich high-quality protein. It is known as plant meat. Tofu contains sterol and stigmasterol, which are effective ingredients for cancer inhibition. Tofu has the functions of high protein, low fat, lowering blood pressure and cholesterol. It's a good food for both raw and cooked food, suitable for all ages, health preservation and longevity
Production steps:
Step 1: a piece of tofu (about 1.5 Jin).
Step 2: half a catty of minced meat (add cooking wine, sugar, green garlic, remove fishiness and make it fresh.)
Step 3: steamed sea rice, agaric, bamboo shoots.
Step 4: a tomato and a cucumber.
Step 5: cut tofu into rectangular pieces (5cm long and 3cm wide).
Step 6: sit on the stove, open fire and add oil (1.5 Jin).
Step 7: oil temperature 60 to 70% heat (about 220 degrees) into the bean curd body fried well (to use a colander constantly flip)
Step 8: deep fry until golden and take out for later use.
Step 9: bend two meters of wire into a rectangle (according to the width of tofu)
Step 10: cut the tofu box along the length, don't cut it off.
Step 11: insert the rectangular wire along one end to the end.
Step 12: drag to the other end.
Step 13: pick it up and dig the tofu box
Step 14: spare the tofu heart.
Step 15: Chop tofu heart into mung bean size stuffing.
Step 16: chop the sea rice, agaric and tofu into a container.
Step 17: leave the bottom oil in the frying pan, add the onion and ginger stuffing and stir fry.
Step 18: stir fry the tofu stuffing.
Step 19: according to personal taste, add seasoning and stir well.
Step 20: put the fried stuffing into the container.
Step 21: fill the fried stuffing into the dug tofu box.
Step 22: after filling the stuffing, place it on the plate and steam it thoroughly in the steamer.
Step 23: cut tomatoes into hob pieces, slice cucumbers, and chop Auricularia auricula.
Step 24: put oil in the pot, add onion and ginger powder to stir out the fragrance, and add all the ingredients to stir fry.
Step 25: add a little soy sauce, vinegar and sea rice soup. Pour in the flour and oil.
Step 26: add soy sauce, salt, vinegar, pour into the sea rice soup. Thicken with starch and drizzle with sesame oil.
Step 27: pour into the tofu box, and a delicious tofu box will be finished.
