I don't know whether it's because there's no baking powder or the flour is stirred up by me. But generally speaking, it's very good to cheat xiaopenyou, especially in the production process, the whole room is filled with greedy aroma, even someone is "seduced" Come and taste a big piece, ha... "
Production steps:
Step 1: separate the egg yolk from the protein, and put the protein in an oil-free and water free container.
Step 2: add 2 tsp sugar to the protein.
Step 3: add a few drops of white vinegar.
Step 4: beat in one direction with the egg beater, and add 4 teaspoons sugar twice during the beating. Beat until the egg beater is lifted, and the egg white is inverted triangular without bending.
Step 5: even if the container is turned upside down, the protein will not flow down, even if it is finished. My hands are really sour
Step 6: break up the yolks.
Step 7: add about 40ml milk and beat well.
Step 8: add proper amount of salad oil and 3 teaspoons sugar and beat well.
Step 9: sift in the flour and mix well. (it's best to mix it. I'm afraid it won't mix well. I used the egg beater to stir it a few times. Maybe the flour is a little stiff.)
Step 10: mix the yolk paste. (originally, it's better to add some baking powder to the yolk paste. I didn't add it because I didn't have it. Actually, I didn't want to add it much. It may be softer if it is added.)
Step 11: Take 1 / 3 of the protein and add the egg yolk paste. Cut it up and down with a spoon and mix evenly. Do not circle it. It will defoaming.
Step 12: add the egg yolk paste to the remaining protein, and cut and mix with a spoon.
Step 13: Ha.. The batter is ready.
Step 14: coat the pan with oil, heat and pour in the batter slowly. (which kind of Pan should be thicker with better heat preservation)
Step 15: close the lid, heat for 3-4 minutes with minimum heat, turn off the heat and simmer for 2-3 minutes, then repeat this step until the batter at the bottom of the pot can be separated from the bottom of the pot. (during this period, you can gently shovel the edge of the batter with a small spoon to help the batter get out of the pan. If you apply more oil to the pan, this step will be easier to operate.)
Step 16: turn the batter over and bake again, or heat it for 3-4 minutes with the minimum heat, turn off the heat and simmer for 2-3 minutes until both sides are golden.
Step 17: it's baked.
Step 18: in fact, you can also use the oil coated mold to bake, or directly use a small spoon to scoop the batter into the pot, so the biggest advantage is that it is easy to turn over, and the baking method is the same as that of large batter. The final taste is similar.
