Production steps:
Step 1: 750 grams of peeled pork and 350 grams of beef. Pork and beef mixed to make dumpling filling will be particularly fragrant, but if you don't like it, you can also use beef instead of the same amount of pork. Beef choose sirloin or beef leg.
Step 2: 5 jin of Chinese cabbage. Because the cabbage will be water, so the amount of 5 jin is not much.
Step 3: Mince Pork and beef.
Step 4: after mixing the two kinds of meat, add 20g ginger powder, 20g garlic powder, 20g zanthoxylum oil, 10g sesame oil, 1tsp salt, 1tsp five spice powder, a piece of thick soup (10g starch and a little water) and stir well.
Step 5: clean and chop the cabbage, wrap it in steamer cloth, and squeeze it out as much as possible.
Step 6: chop all the cabbages.
Step 7: 2 spoonfuls of fresh soy sauce in June and 1 spoonfuls of fresh soy sauce in June.
Step 8: mix the cabbage and meat stuffing, add 2 teaspoons of June fresh soy sauce, 1 teaspoon of June fresh soy sauce and 2 teaspoons of salt, and stir well.
Step 9: 1000 grams of flour and 640 grams of water knead into dough, cover and let dough relax for 30 minutes.
Step 10: take a small part of the loose dough and knead it round. Then insert it into the middle of the dough with the thumbs of both hands, and then pinch it with fingers crossed, as shown in the figure.
Step 11: then cut the dough into small pieces.
Step 12: roll into dumpling skin.
Step 13: pack in the filling.
Step 14: hold it in the middle.
Step 15: pull up one third of the side and hold it up.
Step 16: do the same for the second fold.
Step 17: pinch 3 folds on one side.
Step 18: make dumplings as shown in the picture.
Step 19: boil a large pot of boiling water. Put the dumplings into the pot after the water is boiled. After the dumplings are put into the pot, gently push them with a spoon to avoid the dumpling skin sticking to the bottom of the pot. Then close the lid and bring it to a boil again. After 4 minutes, the dumplings are almost cooked. I never add cold water to make dumplings. I just boil the dumplings over low heat.
Step 20: prepare a stack of vinegar and add a few drops of sesame oil to the vinegar. This kind of dumpling vinegar will taste better.
