Production steps:
Step 1: prepare all the materials;
Step 2: soak cow's tail in water for several hours in advance, better overnight, and change water several times in the middle;
Third step: after the steeping tail is washed, put it into the pot, add ginger skin, a large amount of water and a little high Baijiu, and then heat it up.
Step 4: after boiling, continue to cook for 5-8 minutes, during which time to remove the foam;
Step 5: take out the cow's tail, clean it with warm water, and drain the water;
Step 6: slice onion and cut tomato into pieces;
Step 7: put a little olive oil in the pot. When it is 50% hot, pour the onion into the pot;
Step 8: stir fry the onion over medium high heat until the surface is slightly golden. Turn off the heat;
Step 9: take the tripe sand casserole, put in the loose ginger, wash the cow tail;
Step 10: add enough water, the amount of water must be more;
Step 11: heat up the fire. After boiling, if there is still froth, continue to skim;
Step 12: add the cut tomato;
Step 13: add onion;
Step 14: add the perfume washed with clean water in advance;
Step 15: add a few drops of rice vinegar;
Step 16: heat over high heat until the soup is boiling in the pot, and continue to cook for 5 minutes;
Step 17: turn the heat down, close the lid and start to cook slowly;
Step 18: after about 2 hours, open the lid, add the cut corn and continue to simmer for 1.5 ~ 2 hours;
Step 19: put chopped coriander in a small bowl;
Step 20: add appropriate amount of salt;
Step 21: fill in the cooked oxtail soup and you can eat it.

Note: 1. It's better to let the seller help chop the tail well, and then if there is more fat, you can remove part of the fat in advance. I bought an imported oxtail, which has been repaired with fat oil in advance, so it's OK; 2. After the oxtail is blanched, it should be cleaned with warm water, so as to clean the surface oil; 3. When stewing oxtail, adding a little rice vinegar can help the calcium in oxtail to separate out better. But it must not be too much, just a few drops; 4. I use purple onion, afraid that it will be spicy after cooking, so I stir fry it in advance, which is still good; 5. Whether the tomato is peeled depends on my personal preference. In fact, after a long time of stewing, the tomato peel will fall off by itself; 6. The amount of spices must not be too much, otherwise it will destroy the original flavor of cow tail.
