Turkish tripe soup
Introduction:

Production steps:
Step 1: rinse the tripe repeatedly with water and cut it into several large pieces. Cut the onion into four pieces. Garlic is not peeled, cut in half.
Step 2: put all the cut materials into the pressure cooker and add cold water to avoid tripe.
Step 3: cover the pot well, cook over high heat until the pressure valve is lifted, and cook over low heat for 40 minutes.
Step 4: after cooking, take out the tripe and cut it into small pieces. Put flour and a little water in a bowl and mix well. Remove the onion and garlic from the tripe soup and pour the broth into another skillet.
Step 5: heat the pot, stir the soup with flour paste, then add the tripe and cook. After boiling, add salt to taste, continue to simmer for 5 minutes, then turn off the heat.
Step 6: add yogurt and egg yolk into a bowl and stir them into a paste. Add into the tripe soup after turning off the heat through a filter spoon. Stir the soup as you add it. Stir well and serve.
Step 7: make the red oil on the tripe soup: add the butter to the small milk pot to heat, and then add a spoonful of chili powder.
Step 8: make garlic grape vinegar: add garlic into grape vinegar.
Step 9: pour a spoonful of red oil and a spoonful of garlic and grape vinegar after the soup is served.

Original yogurt: 2 tbsp

Chili powder: 1 tsp
Note: you can also use Morchella, but be sure to rinse it clean. Yogurt must be original, not sweet or fruity. Those who don't like yogurt can also be reduced from 2 to 1 teaspoon. Don't continue to cook after adding the batter. Garlic grape vinegar can be put or not put according to their own taste.
