Production steps:
Step 1: cut one purple potato into two parts and steam it in a pot. Just use chopsticks to pass through the purple potato. Then take it out, peel it and press it into mud. The more broken it is, the better. The picture is not broken enough. Add sugar. The sweetness depends on your taste.
Step 2: dissolve in warm water and yeast, let stand for a few minutes, add a little sugar to 300g flour, stir evenly, add yeast water, stir into flocculent, knead into smooth white dough, take about two fifths of the white dough and the purple sweet potato paste just made, knead well, because the sweet potato paste has a little water, add some dry flour, knead the last two colors of dough well, round, Put it into the steamer, cover it and wait for fermentation. Open fire and heat the steamer for a few seconds. Put some water in the steamer.
Step 3: after one hour, the fermented dough will be about 1.5-2 times of the original size. Take out the exhaust gas and knead it to the original size.
Step 4: put some dry powder on the tabletop. I made it directly on the stone tabletop at home without a panel. Then use the welding stick to flatten the two pieces of dough respectively, repeat several times to exhaust the air. Finally, press the two color dough into similar shape dough, with the thickness of 1cm left and right. The white dough is placed below, slightly larger than the white dough, and the purple dough is placed above the white dough, and then roll it up, Press it with a little force, but don't damage the shape. Roll it up and close it down, then cut it into pieces with a knife, as shown in the picture.
Step 5: put some oil on the steaming plate, and it's better to put it on the edge to prevent the steamed bread from sticking to the edge. Put in the newly cut steamed bread, and pay attention to the space between the steamed bread and the steamed bread.
Step 6: put the whole plate into the pot, put water in the pot, cover the pot, let it ferment for about 15 minutes, then start steaming over medium heat, the water boils and white gas comes out, then turn down the heat a little.
Step 7: you can turn off the fire in about 12 minutes. The specific time depends on the size of the steamed bread. After you turn off the fire, you have to wait for 5 minutes before opening the lid of the pot.
