[steamed handmade lion head] - taste from the countryside
Introduction:
"It's a dish I'm very good at. I've watched my father cook it since I was a child. In our hometown, it's a very popular local dish. No matter what wedding banquet, birthday party or other happy events, it's indispensable in the banquet. And the new year, is also every household must do, new year's day, my father always hands with a pair of knives, constantly in that "wave". Every time I go home, I often meet people who travel to live at home, and they usually like to eat these authentic rural dishes for dinner, such as braised pig's feet, local chicken soup, handmade lion's head, etc., which are very popular. "
Production steps:
Step 1: prepare the main ingredient: pork leg.
Step 2: prepare the ingredients: Horseshoe, onion and ginger.
Step 3: peel the horse's hooves and cut them into small cubes, onion and ginger.
Step 4: 1 tablespoon of sweet potato powder, add 5 tablespoons of water, mix well, set aside.
Step 5: dice the fat meat and lean meat, and set aside the fat meat.
Step 6: chop the lean meat into thick minced meat.
Step 7: add the Diced Pork.
Step 8: chop into delicate minced meat. (don't make it too mushy. Keep it granular so that the lion's head is crisp.)
Step 9: add horseshoe, onion and ginger.
Step 10: Chop well. (don't chop it too long here. It's mainly for mixing. If you chop up all the horseshoes, there will be no horseshoe particles in the lion's head, so it's not so crisp.)
Step 11: put the chopped meat into a large bowl, add the above seasoning, wear disposable gloves, add the water starch prepared by sweet potato powder, and grasp the minced meat well. (about 2 or 3 minutes, no need to stir)
Step 12: put the right amount of minced meat in the palm of your left hand, and use a kitchen knife to repeatedly scrape it with your right hand until it becomes a round lion's head. (this step is a little difficult and requires skilled skills. I was a child. The chef and my father both did this, so I learned it this way. Now I am proficient in this method. If I can't use this method, I can hold it with an iron spoon in my right hand and make circles with the repeated scraping on my left hand. The iron spoon is the kind that usually feeds children, because the middle of the spoon is round, while the bottom of the ceramic spoon we usually drink soup is flat, so it is not suitable.)
Step 13: do all the lion heads in turn, I made 2 sets.
Step 14: steam well. (put cold water into the pot, turn the water to the boil, and steam for about 5 minutes. The picture shows that it has been steamed. You can see that there is a lot of soup on the plate, because water starch is added to the seasoning.)
Step 15: take out the steamed lion head and put it on a plate. Decorate it according to your imagination.
Step 16: pour the soup into the pan, add a little water and starch, and make a thin thicken. (thin thicken is OK, not too thick silk)
Step 17: pour the sauce evenly on the decorated plate.
Materials required:
Pork leg: 500g
Horseshoe: 6
Ginger: 1 piece
Chives: 3
Coarse sweet potato powder: 1 tbsp
Starch: a little
Table salt: 1.5 teaspoons
Raw soy sauce: 1 tbsp
Cooking wine: 1 / 2 teaspoon
Sugar: 1 teaspoon
Barbecue sauce: a little
Note: the heart of the poem phrase: 1: the production of lion head meat choose pork leg, the best is the front leg, do not use loin with fat meat to make. 2: When chopping meat, first chop lean meat, and then add fat to chop together. If you add fat to chop together at the beginning, it will be chopped into oil. 3: Add the horseshoe dice at last, and don't chop it too long after adding, so as not to chop it rotten. Then there will be no particles. Keep the small particles, and the final dish will be loose and crisp. 4: After the minced meat tastes good, do not stir hard, wear disposable gloves to grasp well. 5: After steaming, it can also be directly put on the plate and decorated without thickening. According to personal preference.
