Especially since this period of time, I especially like to try to make some bread that I have never made before. Even the meeting of making good noodles will suddenly produce some inexplicable inspiration, so I changed my original idea and practice, and changed the bread that I wanted to make into something whimsical. Ha ha, it's probably one of the fun of baking! In fact, this panda bread was made after I mixed the good noodles and even fermented the Zhongzhong dough. Ha ha, my family has always liked to eat Hokkaido (Zhongzhong) toast, just taking advantage of some light cream. Originally, I wanted to continue to make Hokkaido, but I didn't want to follow the rules and continue to make Hokkaido. Moreover, I didn't want to make it I've always wanted to make panda bread for some time, so this panda bread made with bread maker was born
Production steps:
Step 1: pour all the liquid and sugar into the bread barrel. Pour in the high gluten flour. Press a small nest in the middle of the flour, pour in the baking powder, and then cover the baking powder tightly.
Step 2: start the dough mixing process, stir to shape, and ferment until the dough is ready to be fermented (it is better to ferment in the refrigerator for 18-20 hours). Fermented dough.
Step 3: tear the dough into small pieces and pour into the bread bucket. Add all ingredients in the main dough except butter. But remember: salt and baking powder should be placed separately at both ends of the bread barrel, otherwise it will affect the efficacy of baking powder.
Step 4 and 15 minutes: start the bread maker. Turn on the toaster and see if you can reach the full stage.
Step 5: add 6 grams of softened butter.
Step 6: continue to start the dough blending process for 15 minutes, and add another dough blending process for 5-10 minutes until the dough can reach the expansion stage, that is, the fascia (glove) stage can be pulled out.
Step 7: divide the dough into three groups: 90g, 280g and 235g.
Step 8: pour a little boiling water into the cocoa powder, mix it into a thick paste, cool it and add it into the dough to make cocoa dough. Add a little boiled water into the Matcha powder to make a thick paste. After cooling, add it into the dough to make Matcha dough.
Step 9: divide the cocoa dough into two 20g and two 29g (make panda's glasses and ears respectively). Divide the Matcha dough into 75g and 215g (the middle of the ear and the last wrapping dough). Divide the white dough into 86g, 30g and 120g (for panda face, middle of eyes and wrapping face).
Step 10: 15. 86g white dough, 30g white dough in the middle.
Step 11: place 29 grams of cocoa dough on each side.
Step 12: wrap 120 grams of white dough outside.
Step 13: put Matcha ball in the middle, 75 grams in the middle.
Step 14: put 20 grams of cocoa dough on each side.
Step 15: finally, roll out the main group of Matcha and wrap all the dough.
Step 16: put it into the bread barrel for the second fermentation, and the fermentation time is 60 minutes
Step 17: after fermentation, start baking key, 30 minutes, medium color.
Step 18: when the time is up, open the lid, put on the heat-insulating gloves, turn the bread bucket counter clockwise, take it out and let it cool for 15 minutes. The bread can be taken out by inverting the bread barrel on the grid. Slice Oh, ha ha, Han Han lovely panda presented in front of you.
