Although I haven't made a leek box before, I think it's hard for master Ma. Hee hee, I'm afraid I'm not familiar with it. It's a little too late when I fried the leek in the box, but I tried it for the first time and told myself it's worth forgiving. Next time we improve and praise ourselves, it's called encouragement. "
Production steps:
Step 1: be sure to wash the leeks first, air dry and blow dry, otherwise the leeks will have cups when they have water bags;
Step 2: mix the noodles immediately when the leeks are airing. Remember to use warm water to boil the yeast powder. I use Anji brand, from snacks to large, but I haven't tried other brands. Add enough water to the noodles at one time, so that the whole dough is dry and wet evenly, the dough is smooth and elastic, and the dough is kneaded and put aside for a while;
Step 3: now start frying eggs, add a little salt in the egg liquid, taste better. Hot pot cold oil, Ma's method: pour the egg liquid into the pot with chopsticks constantly stirring, don't let the eggs solidify, so the scrambled eggs are broken state, don't need to use a knife to cut again, and taste good, after stir fry, take advantage of the hot pot and then slightly scratch two small shrimps, burst out the flavor of shrimps, and put them together with the eggs to cool;
Step 4: at this time, the leeks should be almost dry. Remember to cut them into pieces, Shovel them into the container, sprinkle with five spice powder, fresh vegetables, and finally put salt. If the salt is put too early, the leeks will easily kill water. Remember not to put any vinegar and soy sauce, or it will become leek egg soup;
Step 5: the dough is almost done, kneaded into small dosage forms one by one, and my three spoonfuls of noodles are made into 12 dosage forms, which are exactly one-to-one with the stuffing. The most troublesome thing about leek box is to pinch flowers. It's really a technical job. I've worked hard, but I can't;
Step 6: hot pan, oil, under the raw leek box, oil on both sides, fried one side, remember to flip the other side, both sides golden or burnt black are successful, fried black you have wood?
