Steamed pork ribs and sea cucumber
Introduction:
"Steam pot is a unique cooking method in Yunnan cuisine. After marinating the meat, put it together with the medicinal materials into a special "gas pot" of boiling seasoning soup, and cook it carefully. Jianshui, Yunnan Province, is a famous pottery town. Its laterite pottery has lovely color and fine workmanship. One of the main products of laterite pottery is "steam pot". This "pot" is actually not a pot in the ordinary sense. It looks like a bowl and has a cover. When you open the cover, you can see that there is a protruding round cavity in the center, like the top half of a hot pot. This round cavity is the steam nozzle, which is inside the pot to heat and steam the food. This steam boiler is a great invention of Yunnan cuisine. Production steps:
Step 1: soak and wash the sea cucumber in advance.
Step 2: chop and wash the ribs.
Step 3: put the spareribs into a bowl, add onion, ginger, salt, pepper and Huadiao wine, mix well and marinate for 2 hours.
Step 4: clean and slice Pleurotus eryngii.
Step 5: spread the spareribs evenly at the bottom of the boiler, and then put a layer of Pleurotus eryngii and Gastrodia elata slices on it.
Step 6: repeat the above.
Step 7: add enough water to the casserole, and then put the steamer on it. Close the gap with a towel and let steam flow on the fire.
Step 8: put the sea cucumber into the steamer.
Step 9: turn the steam to low heat for 1 hour and 10 minutes, then turn off the heat.

Tianma tablet: 3G
Pepper: 3G
Salt: 5g
Huadiao wine: 10ml
Note: do not put water in the boiler, all the soup comes from the distillation process. No MSG.
