Production steps:
Step 1: cut the salmon into long fillets obliquely, then cut a piece of fish of the same size and shape, and cover 2 / 3 of the cut fillets; in this way, cut two to three pieces of fish, and press 2 / 3 of the front fillets; stagger four or five pieces of fish to form a line;
Step 2: with the palm of your hand, carefully erect the fish fillets on the chopping board, then gently enclose them, and turn the edge of the fish surface slightly to form a rose;
Step 3: according to this method, make more than 7 small roses and a big rose for standby;
Step 4: carve the peacock's head and body with white radish, and make eyes with carrot; spread the coriander leaves into a fan-shaped pad under the peacock's body;
Step 5: then make peacock feathers with white radish slices of about 5mm in thickness and cover the coriander leaves;
Step 6: put shredded carrots, cucumber slices, colored peppers and cherry fruit on the plate according to the pictures, and make peacock wings;
Step 7: put the rose leaves according to the picture and make the peacock's outermost feather (I picked the leaves from the community);
Step 8: place the salmon rose neatly on the rose leaves; dip in the juice, mix with sashimi sauce and mustard sauce, and the amount depends on your preference.
