Braised rice with peas
Introduction:
Pickled cabbage is sausage with very special taste in Sichuan. It is cooked with seasonal vegetables and sausages, cooked with raw rice, salted and soft and glutinous, which can be used as staple food and cooked dishes, and then served with a Kwai pickle, a bowl of bone soup, a perfect fast food.
Production steps:
Step 1: soak rice and glutinous rice in the ratio of 1:1 for more than 2 hours in advance. I used the rice measuring cup with the highest 160ml scale, a cup of rice and a cup of glutinous rice.
Step 2: prepare potatoes, diced carrots, and green peas together, the approximate ratio is 1.5:1:: 1. Blanch carrots and peas until half done
Step 3: cook the sausage. Cut the dice. Sausage is a necessary home food for winter in Sichuan Province. It's usually delicious to go to the butcher's to buy fresh meat and let the butcher help with processing. If you don't have homemade sausage, you can also use the commercially available Cantonese sausage
Step 4: pour the oil into the pot, pour in the diced sausage, stir fry slowly over low heat, and force out the oil a little bit, which is more healthy
Step 5: pour in potatoes and stir fry for a while, then pour in boiled peas and diced carrots
Step 6: stir fry until 8 mature, add salt, salty degree and usual cooking can be almost
Step 7: drain the rice and pour it into the cooker
Step 8: stir fried sausages, diced vegetables and oil into rice
Step 9: add water. The amount of water is very important. Generally, the ratio of water to rice is a little more than 1:1. I used the same measuring cup and used two and a half cups.
Step 10: cook the rice. Just use the normal cooking procedure. When cooked, the meat will be on the surface
Step 11: mix the rice and vegetables well
Step 12: loading. It's very soft and waxy. It's very salty and delicious

Note: 1, the steps of soaking rice is not less, if time is tight, you can use hot water to soak rice, it will be much faster. 2. The amount of potatoes can be a little more, and it can be a little larger when cutting, because it's very ripe and tastes good. 3. When frying, don't add too much oil, because oil will come out of the sausage. If the sausage is very thin, you need a little more oil. 4. If you don't use an electric rice cooker, pour it directly into a casserole and simmer it over low heat, it will taste better
