Two sides of oyster sauce
Introduction:
"I remember when I was a child, my father made fried noodles with two sides of yellow sauce. It was so delicious. I yelled, Dad, you're really good. He said that he ate it when he was on a business trip and learned to make it from memory. Now I just try to make it with my little memory and imagination. I can't buy yellow sauce here, so I use garlic sprouts instead. It's the same fragrance."
Production steps:
Step 1: boil a large pot of boiling water, the next bar, the noodles just cooked, and then wash with clean cold water, we call it supercooled River;
Step 2: wash the garlic seedling and cut it into segments;
Step 3: put the pan on the stove, heat up, add oil, stir fry the noodles several times, then spread the noodles evenly and over medium heat, and don't turn the noodles to shape;
Step 4: while the noodles are still wet in the pot, wait for a short time. In a bowl, add about 2 tbsp oyster sauce, 1 / 2 tbsp sugar, 1 / 2 tbsp corn starch, 1 / 2 tbsp chicken powder (can be omitted if you don't like), 1 / 2 tbsp sesame oil and 1 / 4 tbsp pepper to make a bowl of juice. Try the salinity, and adjust if it is not salty enough or too salty;
Step 5: when the noodles are golden, like pancakes, turn the whole cake over and bake on the other side;
Step 6: add proper amount of oil and bake until golden yellow. After baking, put it on the plate;
Step 7: stir fry the garlic until it's just ripe, don't put salt in it (the garlic will pour out water if you put salt in it, it's not good), and spread it evenly on the top of the noodles;
Step 8: pour the bowl of juice into the pot, stir it continuously, until it is bubbly and feels like an air top spoon. Stop the fire and pour the juice on the top of the garlic noodles.
