At that time, the Japanese invasion was rampant and the war continued. The people along the way vied to reward the three armies, but the Qi army had strict discipline and did not accept gifts. The people of Minqing County specially made a kind of cake with holes in the middle, which was strung up with bittern grass and hung on the necks of Qi's soldiers. Qi Jiguang felt deeply that the people loved the army and that the army also needed portable dry food, so he ordered the land to accept the people's wishes. After the news spread to Fuzhou, the local people made a kind of cake smaller than Minqing cake, which is more convenient to carry. They wore it with string and gave it to Qi Jiajun. Later, to commemorate Qi Jiguang's Anti Japanese War, people called the small cake "Guangbing" and the big cake "Zhengdong cake". Guangbing is very popular among Fuzhou people. The ancient literati like to eat light cakes. When Ju Zi who came to Beijing to take the exam passed by Fuzhou, he had to buy many light cakes to use as dry food on the way. Over time, how many light cakes he ate became a synonym for measuring Ju Zi's hard work. "
Production steps:
Step 1: mix flour, yeast, soda, salt and water into smooth dough to wake up.
Step 2: divide the dough into about 70 grams each.
