Shandong cuisine: Sweet foam
Introduction:
"Sweet foam" is a kind of traditional public porridge food in Jinan. It is a kind of salty porridge mainly cooked with millet noodles, which is also commonly known as "five fragrance sweet foam" by Jinan people. Among the many snacks in Jinan, sweet foam is the most inexpensive and high-quality "signature" snack. In the late Ming and early Qing Dynasty, due to natural disasters and wars, a large number of refugees swarmed into Jinan. There was a small porridge shop surnamed Tian who often gave up porridge for relief. The victims told each other that more and more people came to the porridge shop to drink porridge. Porridge shop is difficult to satisfy people's demands, so a large number of vegetable leaves and salty and spicy seasonings are added to porridge. When the victims see white foam in the big pot of porridge before serving the bowl of porridge, they affectionately call it "Tian Mo", which is the porridge of boss Tian's relief house. Sometimes a scholar who came from other places to help with the exam also came here to get this porridge. He ate it sweetly and thought that "sweet foam" was true. Later, when the scholar got his official title and came to Jinan to drink sweet foam again, he had no feeling of the past. When he asked about the reason, the boss said it was "Tian Mo", which means congee of Tian's surname. The official realized that he had only listened to the sound but did not distinguish the handwriting, so he inscribed the plaque of "sweet foam" and recited a poem: "mistakenly making Tian Mo sweet is because of the confused experience at the beginning; after reading all the vicissitudes of life, it is always sweet after bitter and spicy." Since then, this kind of salty porridge has been called "sweet foam". It seems that only when you come to the scene and drink this delicious salty porridge, can you feel the origin of a sweet foam! There is a saying about the origin of "sweet foam": it was not called "sweet foam" in the first place, but "Tim Mo Er" - when the porridge is ready, add some "Mo Er" such as vermicelli, vegetables, peanuts and seasonings. It tastes great! "Tim Mo'er" spread. Later, people became "sweet foam" according to its homonym
