Production steps:

Step 3: cover with plastic wrap and ferment to twice the size in a warm place
Step 4: bring baking soda and salt to a boil with a little warm water. Rub the dough well again with the soda and salt water
Step 5: apply water several times, knead thoroughly every time
Step 6: cover the dough with fresh-keeping film for fermentation
Step 7: ferment again to twice the size. At this time, the noodles are also sticky. You can make strips by pulling them with your hands
Step 8: apply a layer of oil on the surface, cover it with fresh-keeping film and put it in the refrigerator for standby (it can also be fried directly at this time, but I use it as breakfast, so I refrigerate it in the refrigerator)
Step 9: the next morning, take out the dough that has been refrigerated all night, oil the panel, and oil your hands
Step 10: take out the dough and put it on the panel. Use your hands to grow the dough into strips
Step 11: apply a proper amount of pepper and oil on the surface, cut it into even small dosage pieces with the oil knife, put the two small dosage pieces together, and press them with chopsticks in the middle (I didn't cut them evenly, so I used a lot of fried oil cakes later, and the dough was too soft and not very good)
Step 12: burn the oil in the pan. When the oil reaches 180 degrees, put it into the fried dough sticks and fry it. While frying, turn over and press the fried dough sticks to heat them evenly. About one fried dough stick per minute will be cooked. (I used a very small pan to save oil, haha)
