Childhood memory -- Fagao
Introduction:
"I believe a lot of people in the 1940s, 1950s, 1960s, 1960s and 1970s ate this. It used to be called Fagao, because every family was not rich at that time. It was a very happy thing to eat it every day. Although I was born in the 1970s and my economic conditions are better than before, my family is still very poor. My mother is a woman who can manage the housework very well and is also a very strong woman. I grew up with my mother's steamed hair cake as a snack. It seems that the hair cake is very rough and nutritious, but it is actually a kind of nutritious food. Because I eat hair cake every day, but did not delay my growth, also did not check out any symptoms of malnutrition. I think it was really hard for my mother at that time, so when I grew up, I still miss the days of eating Fagao. Now the living conditions are better, and the things I didn't eat before have become fine products, just like this Fagao, now it's called coarse grain and fine food. Today, I also came to make a cake that I ate when I was a child. I can really eat the bitterness and tears of the past, as well as the happiness and moving of the present. "
Production steps:
Step 1: first put the corn flour into the basin, then blanch two-thirds of the corn flour with hot water, stir it into blocks with chopsticks, mix it with the remaining one-third of the corn flour, and let it cool.
Step 2: turn the yeast powder with warm water, then put the white flour into the corn flour, add appropriate sugar, pour in the yeast water, mix the flour, wake up and let the flour ferment. (the dough should be soft, as long as it can't be kneaded into dough)
Step 3: when the water in the pan is boiling, lay the cloth in the drawer and put the whole dough into the pan (because the dough is soft and thin at this time, it's better to dip some water on your hand and pour the whole dough into the curtain), and then insert some chopsticks on the dough. Cover and steam for 30 to 40 minutes.
Step 4: after steaming, take out the whole dough from the pan and put it on the panel. Dip water on the knife and cut it into pieces you like. Then you can eat it.
Step 5: this coarse grain cake is ready. Eating coarse grains often helps the absorption of intestinal tract. It's good for your health. Please taste it carefully. Only those who have experienced it can taste it more carefully and deeply.
Materials required:
Corn flour: right amount
White flour: moderate amount
Sugar: right amount
Yeast powder: right amount
Water: moderate
Note: because Fagao is different from white flour steamed bread, it needs to be soft and thin when making dough. It doesn't need to be kneaded into dough. As long as the white flour and corn flour are fully integrated together, don't knead it after waking up, just spread the big soft dough into the pot. The bigger the steamed bee eyes, the more delicious they are. The ratio of corn flour to white flour depends on your taste. If you like to eat more coarse grains, put more corn flour, otherwise put less. I wish you all good health.
