Baqiu town

Baqiu town is located in the middle of Xiajiang County, Ji'an City, Jiangxi Province, to the west of Ganjiang River. Originally the county seat of Xiajiang County, it was moved to Shuibian town on July 1, 1997. The resident population was 33310 (2017).

Baqiu town is adjacent to Ganjiang River in the East, Jishui County in the south, Luotian town and Yanxi town in the west, Fumin town in the East, Geping town and Renhe Town in the north. Baqiu town is located in the middle of Xiajiang County, Ji'an City, Jiangxi Province.

Historical evolution

Originally the county seat of Xiajiang County, it was moved to Shuibian town on July 1, 1997.

In the second year of Wu Baoding of the Three Kingdoms, it was the county government when he set up Baqiu county. In the fifth year of Jiajing of the Ming Dynasty, it was also the county government when he set up Xiajiang county. In the third year of Yongzheng of the Qing Dynasty, he avoided the name of Confucius and changed Bachu to Baqiu.

After the establishment of the county, it has been the political, economic and cultural center of the county. On July 1, 1997, after the county government moved to Shuibian Town, it was still an important town in the county.

Artemisia xiajiangensis

It was originally a kind of wild vegetable on the side of the road, which was carefully cultivated by foreign experts.

It has become the largest Artemisia production base in Jiangxi Province. Xiajiang rice noodles

It began in Jiajing period of Ming Dynasty and has a history of 460 years. It was once praised as tribute flour by Emperor Jiajing and honored as "loyal rice flour". It's the most common dish on Xiajiang people's breakfast table.

Stir fried rice noodles with beef, take 0.5kg dry rice noodles, 2 liang beef, 5 yuan chive, 2 yuan Shuifa mushroom, 3 Liang lard, 1 yuan cooking wine, 5 yuan soy sauce, 5 yuan red pepper, 2 liang fresh soup, 2 yuan monosodium glutamate, and an appropriate amount of salt.

Soak the dried rice noodles in warm water, remove and drain. Cut the beef and red pepper into one inch long and short pieces. Cut the mushrooms and green onions into one inch long pieces. Put the pot on a high heat, add 1 liang lard, when it is 60% hot, pour in the shredded beef and stir fry, then put the shredded pepper and scallion into the pot for about 1 minute, add soy sauce, cooking wine, monosodium glutamate and fresh soup, and cook for 2 minutes to make the pouring material, and set aside. Then, wash the pan and heat it on the fire. Pour in 2 liang lard and heat it to 60% heat. Stir fry the rice flour for 2 minutes, then put the pouring material into the rice flour and mix it several times until the soup is dried. Features: soft and smooth, fragrant and salty.

Boiling powder, also known as soup powder. Put the rice noodles in boiling water for 3-5 minutes. When it is soft, put it into a bowl. Then add shredded meat, shrimps and other seasonings. The soup is delicious.

Xiajiang silk candy

The production process is as follows: 1.5kg barley is used to make malt, 13kg soybean is used to stir fry and grind into powder. Production process: wash 30kg white glutinous rice, filter it dry, steam it in a wooden steamer, then put it into a vat, mash the malt, add 50kg hot water at 60 ℃ and mix it well, then cover it with straw and seal it for 6 hours. After the glutinous rice is fully fermented, spoon it into the bamboo pressing basket and press the juice with a wood press. Set the saucer in a pot and burn it.

When the water evaporates to a certain extent, the sugar juice begins to bubble in the pot. When the sugar drops into the cold water, it immediately condenses.

At this time, great attention should be paid to the fire to prevent aging or burning. Put the gelatinous sugar into a pottery bowl, cool it in clear water, and then pour it into a large drying plate. 6-9 people sit around and pull it hard, turn it upside down and pull it repeatedly, and sprinkle soybean powder while pulling to prevent adhesion. Until the sugar is pulled into hair like shape, and grow about 3 cm small circle with fingers. Put it into a round wooden barrel, pour the cooked soybean powder and mix it.

Bean pepper
