Three kinds of silk method:
The raw materials needed to make three kinds of silk are as follows:
Chicken skin 75g, pig skin 100g, jellyfish skin 75g, chicken 75g, sauce elbow flower 100g, onion 15g, sesame oil 2.5G, pepper oil 25g, sesame paste 10g, refined salt 3G, soy sauce 10g, vinegar 15g.
Three steps of making silk:
1. Soak the jellyfish skin in clean water, remove the sand, tear off the blood film, wash it with water, cut it into pieces, scald it with seven mature water, take it out, and soak it in cold water until it is crisp and tender without fishy smell.
2. Put chicken skin, pig skin and chicken into the pot to cook and take out. Sliced pig skin, chicken skin and jellyfish skin were cut into 5cm filaments. Select the sauce elbow flower with skin, slice the skin into thin slices, cut the lean part and chicken into thin strips, and serve as the bottom dish.
3. Cut the scallion into shreds, put it into a bowl, pour hot pepper oil on it, and then add shredded chicken meat, shredded elbow, add salt, soy sauce and vinegar, stir well. Put it into a plate, put it into a triangle, and then cover the chicken skin, jellyfish skin and pig skin on the elbow flower and chicken skin respectively.
4. Add salt to sesame paste, mix with sesame oil, and pour it on three shreds
Characteristics of three skin silk:
"Sanpisi" is an ancient Chang'an dish evolved from the "parchment silk" in Wei Juyuan's "Shaowei banquet" in Tang Dynasty. This dish has crisp skin, tender meat, refreshing and unique flavor. In the food account of Shaowei banquet, there are only three words "length and inch" under the "sheepskin silk", and there is no record of cooking method. It is said that this dish was originally called "peeling leopard skin" and was created by chefs of Chang'an in the capital of Tang Dynasty to vent their dissatisfaction with Wang Xu, Li Song and Li Geng. Wang Xu was the censor of Zuotai in the middle Tang Dynasty, while Li Song and Li Geng were the censors of lincha. The people of Chang'an were extremely resentful of these three evils. They called Wang Xu "black leopard", Li Song "red Lathyrus leopard" and Li Jiao "white forehead leopard". There is a chef surnamed Lu in Chang'an who makes vegetables and wine from black chicken skin, jellyfish skin and pig skin, which means to peel the skin of "three leopards" alive
Attention should be paid to when making three kinds of silk
Don't cook chicken skin and chicken too old. First of all, pour hot pepper oil on the top of scallion, then put chicken meat and elbow silk, in order to make it fragrant.

Practice 1
(1) Remove the subcutaneous fat from the cooked pig oil skin, slice it into thin slices and cut it into 5cm long filaments. The cooked chicken skin and jellyfish skin are also cut into 5cm long filaments to form "three filaments", which are packed in a disc and stacked into three small towers. Ham, agaric and green vegetable filaments are respectively placed on the top of the three towers.
(2) Put sesame oil (25g) in the frying pan, put the pepper into the frying pan and fry it over low heat to get the flavor of pepper. Do not use it when you take out the pepper. Pour in vinegar and soy sauce, add refined salt, ginger powder and boiled Sanhe oil, pour in between the three towers, pour in sesame paste, and then pour sesame oil (25g) on three shreds.

Practice 2
1. Jellyfish skin, black chicken skin, cooked pig skin, ham, onion are cut into 5 cm long filaments.
2. Pour hot pepper oil on onion shreds, mix with salt, vinegar, sesame paste, sesame oil, soy sauce and ham shreds. Drain the juice and put it on the bottom of the plate.
3. Mix the three shreds with sauce and pile them into three piles.

But there is a hotel in the west of Chang'an city. The owner's surname is Lu. This man has always been kind and jealous of evil. In order to promote public opinion, boss Lu first created a dish with wine, which is made of jellyfish skin (light red), pork skin (white) and black chicken skin (black). As soon as the dish came into the market, it spread all over the capital. In order to vent their anger, people rush to taste the dish called "peeling leopard skin".
This event caused a sensation in Chang'an city. Soon after, some treacherous officials reported to the master. How can the censor, who is in power over the government and the opposition, give up? Finally, one day, people found that boss Lu had been killed. What's more infuriating is that the authorities can't find out who the killer is. People no longer want to be silent. The grievances of the people are strongly manifested once again. All the restaurants and small hotels in Chang'an City follow the cooking method of "peeling leopard skin" made by boss Lu during his lifetime, and offer similar dishes, with a louder Name: "sanpisi".
The three big treacherous officials knew that this was revenge and extreme disgust, but they were afraid of making too many enemies, so they had to let it go.
The chefs in the ancient city of Xi'an have inherited this traditional dish from generation to generation, and the production is becoming more and more exquisite. When people taste the "three piss", they not only enjoy themselves, but also feel the joy of justice conquering evil. It's killing two birds with one stone.
