What kind of water is used? " I said: "production is good, is to use the Chishui River water." Chairman Mao said with a smile, "if you make it 10000 tons, you have to guarantee the quality." However, through the investigation, it is found that Maotai Town, located in the northwest of Guizhou Province, is located in the north of the western section of Dalou mountains. The mountain road is rugged, the slope is steep, and the traffic is very inconvenient. Besides, both sides of the river are landslide zones with poor geological conditions. In view of the situation at that time, expanding the production of Maotai Liquor on the original basis not only has a large investment, but also has many practical problems that are difficult to solve. Therefore, the relevant departments of the central government and Guizhou Province have decided to expand the production in Maotai area as much as possible, and at the same time, carry out ex situ test, and on the premise of being sure, build factories in other places to make up for the lack of production in Maotai.
But can Maotai liquor be produced easily? Only through rigorous scientific experiments can we come to a real conclusion. In this way, the project of Maotai liquor ex situ production test can be carried out. After China's talent shows itself, the Moutai distillery and some national brewing experts, and the relevant departments of Guizhou provincial science and Technology Commission, Zunyi Prefecture and city, after comprehensive inspection and scientific demonstration of the necessary conditions for brewing Maotai Baijiu liquor, Zunyi's Beijiao Cross shop area is finally released from numerous candidates. It is only 130 kilometers away from Maotai Town, and close to the two major transportation arteries of Sichuan Guizhou railway, so the transportation is very convenient. On December 9, 1974, according to the spirit of the document issued by the science and Technology Commission of Guizhou Province and the Department of light industry of Guizhou Province on August 29, 1974, the Revolutionary Committee of Zunyi City issued the notice on building a new "Maotai liquor ex situ test plant", and decided to set up a "Guizhou Maotai liquor ex situ test plant" in Shizipu, northern suburb of Zunyi City to officially carry out the "Maotai liquor ex situ test".
In October 1975, Guizhou Maotai liquor ex situ test plant officially put materials into exploratory production. In the same year, the science and Technology Office of the Chinese Academy of Sciences named "Maotai liquor ex situ production test in Guizhou Province (pilot test)" and listed it as a national key science and technology project. In this regard, the legend of Maotai flavor, which originated from the long cherished wish of great people, was officially opened. According to Premier Zhou Enlai's instruction that Maotai liquor should be developed to 10000 tons, Comrade Fang Yi, then Vice Premier of the State Council and director of the State Science and Technology Commission, personally presided over the project of "Maotai liquor ex situ test" and listed it into the key scientific research project of the sixth five year plan, Vice Premier Fang personally organized technical experts from the State Science and Technology Commission, the Ministry of light industry and Maotai distillery to form a "Maotai liquor ex situ trial production" research group, and set up a "Guizhou Maotai liquor ex situ trial plant", which is located in the suburb of Zunyi, a revolutionary Holy Land in the Chishui River Basin. In addition to experts selected from Maotai distillery, its technical personnel and production backbone are also selected from Maotai distillery. In order to ensure the smooth progress of the experiment, 28 outstanding talents, represented by Zheng Guangxian, former director and Deputy Secretary of the Party committee of Maotai distillery, Yang renmian, former deputy chief engineer, Lin Baocai, deputy director of the laboratory, and Zhang Zhiyun, former close disciple of Zheng Yingcai, a former Huashi Maotai distiller, were transferred from Maotai distillery. Among these 28 people, there are not only excellent management personnel, first-class brewing masters and backbone of scientific research and sales, but also workshop technicians, wine evaluation technicians and other important staff. It was the arrival of these 28 people that brought not only authentic Maotai brewing technology, but also Maotai production, management, sales organization and management experience. Even many of its original raw materials, accessories, production equipment, etc. are also transported from Maotai distillery.
Under the special historical conditions at that time, the research work of "Maotai ex situ trial production" was extremely arduous. After 9 cycles, 63 rounds, 3000 times of analysis and experiments, and more than 10 years of hard exploration, the "ex situ Maotai" finally passed the appraisal of the State Science and Technology Commission in October 1985: "the wine is clear, transparent, yellowish, with outstanding sauce flavor, long taste, and lasting fragrance in an empty cup. The flavor and trace elements of Maotai liquor are the same as those of Maotai liquor, which has the basic style of Maotai liquor.... " Vice Premier Fang Yi happily wrote an inscription for this purpose: "treasures in liquor congratulations on the success of Guizhou Maotai liquor ex situ production test and identification". According to the inscription of Comrade Fang Yi, the name of Maotai liquor was changed from "Zhenjiu" to "Guizhou Zhenjiu". Therefore, Guizhou Zhenjiu is also known as "Yidi Maotai" and "Maotai sister liquor".
