Processing steps of fried kidney flower:
(1) Cut the pork kidney into two parts, remove the waist bash, soak in cold water for about 1 hour, divide it into flower, shape it into wheat ear, put it into a basin, add refined salt, cooking wine, egg white, starch and pepper, mix well, wash the scallion, pat it flat and cut into sections, soak the black fungus and wash it for use.

Production process
