How to make tofu
Raw materials for making tofu
There are 4 pieces of water tofu (about 30g), 150 grams of minced meat stuffing, 2 eggs, 10 grams of soy sauce, 5 grams of sugar, 3 grams of refined salt, 2 grams of monosodium glutamate, 6 grams of wet starch, 40 grams of flour, 5 grams of scallion, 5 grams of minced ginger, 1 gram of pepper, 150 grams of chicken soup, and 1500 grams of peanut oil (about 100g).
Tofu processing steps:
1. Turn the water tofu into a square. Knock the eggs into a bowl, add 5g of wet starch, 2G of flour, 2G of refined salt and 1g of monosodium glutamate to make the whole egg paste.
2. Put the frying pan on a high heat, heat the peanut oil to 70% heat, fry the tofu in water for about 3 minutes, and remove it when it is mature.
3. Poke the deep fried tofu into one side with a knife, dig out three-quarters of it, then fill in the minced meat evenly and seal it with wet starch.
4. Place the original frying pan on the high heat again. When the oil is 60% hot, wrap the filled tofu pieces in the whole egg paste and put them into the pan one by one. Deep fry them for about 3 minutes until they are golden.
