Raw materials for making diced beef tofu
There are 250g tofu, 50g beef, 50g peanut oil, 1 egg white, 15g cooking wine, 10g sugar, 25g soy sauce, 2G salt, 10g soy sauce, 10g scallion, 2G monosodium glutamate, 5g ginger and 10g starch.
Processing steps of diced beef tofu:
1. Rinse the bean curd, cut it into 2 cm square cubes, pour it into a boiling water pan, blanch it, take it out and control it to dry.
2. Wash the beef, remove the fascia, cut it into 5 mm square cubes, put it into the basin, add egg white, salt, monosodium glutamate and starch, and grasp well.
3. Peel the scallion, wash it and cut it into 2 cm long pieces; peel the ginger, wash it, chop it up and set aside.
4. Stir fry with a frying spoon, add 25g peanut oil, when it's 50% hot, add diced beef, stir fry a little, then pour out, set aside.
5. Pour the remaining 25 grams of peanut oil into a frying spoon, heat it, add scallion, minced ginger and soy sauce, stir fry a few times, then add diced tofu and diced beef, stir well, then thicken with starch.
