According to Zhang Qingyi, President of Hetao Liquor Group, the history of Chinese liquor making is a profound cultural history. Unearthed archaeological relics show that as early as 5000 years ago, the ancestors of the Chinese nation had learned to make wine with grains. By the Shang Dynasty, people had been able to use "Qu tiller", that is, malt and millet bud as saccharifying agent for wine making. From the Western Zhou Dynasty to the Han Dynasty, the brewing technology was further improved, and different brewing methods and different types of wine appeared. From the Tang and Song Dynasties to the Ming and Qing Dynasties, China's liquor making industry was unprecedentedly prosperous, creating many famous wines.
Zhang Qingyi said that since the advent of wine products, Chinese people have formed an indissoluble bond with wine. There are many things to celebrate, such as the battle of the general in his armor, the poetry and painting of the literati, the celebration of the family, the gathering of the high friends, the joy of the title, the Jubilee of the housewarming and the banquet. In ancient Chinese literature, poems, novels and operas, there are abundant records about wine ceremony. There are many well-known poems, words, songs, songs, Fu and interesting legends, which constitute the broad and profound traditional Chinese wine culture. The wine culture museum of Inner Mongolia only displays a few of them. (end)
