It is said that during the reign of Daoguang in the Qing Dynasty, the calligraphy of Liu (Gongquan) di ou (Yangxun), the hand of Xu Sizhuang, a native of guanxi in Longnan, was a masterpiece of the dynasty. Xu Sizhuang once worked as the calligraphy teacher of emperor Xianfeng. Xu Sizhuang once returned to his hometown to visit his relatives. At the same time, Emperor Xianfeng sent people to purchase materials in the south of the Yangtze River and specially ordered the imperial envoy to visit Xu Sizhuang in Longnan. Because of the difficult road, he was so tired that he was out of breath. He arrived at Xu's home in the evening. He said that the mountain road was rugged and difficult to walk, and he almost suffered from heatstroke. Xu Sizhuang ordered the chef to cook pearl soup to quench the emperor's thirst and hunger. At one end of the soup, the emperor saw that the Pearl Pill was like Jasper's eye, which was fragrant and tonic to the nose. His appetite soared. When he ate it, he felt soft and tough, smooth and delicious, and tasted delicious. After eating, the stomach is comfortable, the brain is clear, the eyes are clear, and the tiredness is gone. I asked Xu Sizhuang what kind of rare mountain treasure it is. I tasted it for the first time. Xu Sizhuang replied with a smile: This is a small dish in his hometown, which is called longan pearl. After hearing this, the imperial envoy said: if the name of the dish is wrong, it will be given the name of "phoenix eye pearl".
Later, when the imperial envoy was leaving, Xu Sizhuang specially sent a large bag of phoenix eye pearls to the imperial envoy to bring back to the capital. After the emperor's appreciation, he could not release his love. The phoenix eye pearls became a tribute to the past dynasties.
The raw material of Pearl counting powder is potato starch. When making pearl counting powder, appropriate amount of water is sprinkled into potato powder, and then the powder is sieved into mung bean sized round beads, which can be stored in the sun for a long time. When cooking, slowly sprinkle the Pearl into boiling water (more water is needed), and stir while sprinkling, so as not to form a paste. When the ball beads are still small white spots, take them out and soak them in cold water When the granules are loose enough to be like fish's eyes, they are cooked in high soup. Then they are served in a bowl and sprinkled with spices and sesame oil. Fengyan Zhenzhu soup has the functions of nourishing, clearing away heat, lowering blood pressure, refreshing the brain and improving eyesight. It is popular in Longnan. In 1988, it participated in the provincial Food Fair in Nanchang, and was praised by the majority of customers. It was rated as a high-quality food with local flavor.
Dried vegetables
There are two kinds of dried beet and pickled cabbage, both of which are made from mustard. Beet drying method: wash and chop mustard, cook it in hot water, and steam it for a long time after drying to 60% or 70%. It tastes sweet and fragrant. After childbirth, women often use beet as the dried vegetable for confinement.

Chuichu
Chuiyu is one of the traditional famous dishes of Hakka waiwu people. It has good color, fragrance, taste and shape. There is a folk saying in Longnan that "those who don't know how to beat fish are not big chefs.". Zuwei chuiyu was developed by Liu huaigu (Chaoyang County Magistrate of Chaozhou, Guangdong Province) in the reign of Daoguang in the Qing Dynasty, and later spread to Longnan. Xu Shouheng, a native of Longnan who was an official in Beijing during the reign of Emperor Guangxu, invited Baiguan to a banquet. He specially asked the chef to make Chuichu. Unexpectedly, Baiguan was very fond of Chuichu, which was praised by Baiguan. For a time, Longnan Chuichu was famous in the capital.
The main raw materials of Chuichu are fresh fish and potato starch. When making, wash the fish, remove the scales, dirt and bones, make them into cakes, and roll them into thin slices with coarse potato flour. When cooking, first stir in boiling water, then take out water to cool and cut into strips. Now put it into the broth to boil, then sprinkle with shredded meat, fragrant flowers and other seasonings.
