Step 3: boil water in the pot, put the ribs into the pot, add ginger and scallion and cooking wine to remove the blood.
Step 4: take out the water and add cooking wine, ginger and onion again. The time is about 20 minutes.
Step 5: steam it in the pot for a long time, about an hour (you can also use the boiling method in this step. After blanching the blood, continue to use the medium and small heat to cook until the meat on the spareribs can be removed and drained. One advantage of steaming is that the meat tastes stronger.
Step 6: after steaming, take out the pot and cool it slightly.
Step 7: put more oil into the pot, but the actual consumption is not much.
Step 8: when the oil temperature is 50% or 60% hot, deep fry the spareribs in the pan until they are brown and red.
Step 9: pour out part of the oil, leave a little oil in the pot, add sugar to boil the sugar.
Step 10: after boiling out the sugar color, add the meat juice from steaming the ribs to make the sugar juice (if not, add soy sauce (but blackened) or coke).
Step 11: put in the spareribs and cook for a while.
Step 12: when the soup is about to dry, add vinegar and stir fry until the juice is bright. Pour in a little sesame oil and turn it well. Then put sesame seeds on the pan. Pay attention to the heat, especially at the last moment, because the juice is thick and easy to fry.
