Crispy supreme seafood pizza
Introduction:
"Since I bought an oven last month, I've always wanted to make a pizza. Forgive me for my inexplicable love for pizza. But to tell you the truth, today's first attempt to make this crispy supreme seafood pizza is not as exquisite as the outside, but no matter from kneading, fermentation, preparation of materials and final baking, it's all made by yourself. The final taste is delicious ~ ~ (to tell you the truth, kneading noodles is really tiring. I don't have any experience at all. Fortunately, it was very successful in the end.)
Production steps:
Step 1: prepare the crust: first, mix the high flour and low flour, add sugar and salt. Add warm water to melt the yeast.
Step 2: add the remaining warm water in several times and continuously stir to form flocs.
Step 3: knead the dough by hand, then put it on the chopping board and knead for about 5 minutes. After the dough is smooth, add corn oil and knead. If you want to be strong, you can beat the dough many times.
Step 4: after kneading the dough smooth, put it in the basin and cover it with plastic film for the first fermentation. At this temperature, it took me about an hour to ferment.
Step 5: This is a fermented dough, which will have a wine flavor. If you dip your fingers in the flour, the holes will not shrink after you pull it out. If you gently press your fingers, the sunken pits on the dough will slowly return to their original state, and the holes in the internal organization of the dough are relatively small, uniform and fine. Knead again into a smooth dough, cover with plastic wrap and ferment for 15 minutes.
Step 6: after fermentation, directly divide into two dough, roll the dough into a thin round cake in the middle and thick around, and put it on a 9-inch pizza plate coated with oil.
Step 7: for the last fermentation, you can put it in the oven at about 38 ℃ for 30 minutes.
Step 8: fork some small holes on it with a fork.
Step 9: prepare the stuffing, marinate the shrimp with cooking wine, black pepper and salt for half an hour.
Step 10: coat with ketchup or pizza sauce and sprinkle with mozzarella cheese.
Step 11: spread a layer of sausage wafers around the crust.
Step 12: spread a circle of pickled shrimp.
Step 13: Sprinkle corn, peas and diced green pepper in the middle.
Step 14: Sprinkle with a layer of Mozzarella.
Step 15: put it into the oven preheated at 220 ℃. Adjust the temperature according to your oven.
Step 16: bake for 15 minutes, remove and bake for 5 minutes with the remaining mozzarella cheese. The total time is 20 minutes.
