Steamed bread with wheat bran
Introduction:

Production steps:
Step 1: get the ingredients ready.
Step 2: put the old noodles and baking soda into the basin. (for the amount of baking soda, please refer to the basin, add a little first, and then add a little.)
Step 3: add appropriate amount of water to melt it.
Step 4: add flour and bran and mix well.
Step 5: add the remaining water, knead into a smooth dough, cover and ferment at room temperature. (about two hours)
Step 6: ferment to twice the size and remove.
Step 7: the dough will be slightly soft. Remove proper amount of dry flour from the table, flatten the dough, exhaust and knead it again to form a smooth dough with moderate hardness.
Step 8: knead into a cylinder (or strip).
Step 9: use a sharp knife to cut into the right size of the preparation, shaping into the green body of steamed bread. (long or round at will, I have about 45g each)
Step 10: add enough cold water into the steamer, put on the steaming grid, pad the corn leaves to prevent sticking, then put in the steamed bread green body, and cover it to wake up. (it's summer, 25 minutes)
Step 11: turn the steam to 1.5 times the size, turn on the medium heat for steaming, turn on the steam and turn on the high heat for 15 minutes, then turn off the fire. After 3 minutes, take it out and let it cool. Don't stew in the pot.

Ordinary flour: 240g
Wheat bran: 35g
Old noodles: 75g
Baking soda: a little
Water: 125g
Note: 1, baking soda should not be more, to open the old paste can not smell sour. 2. The first fermentation of dough, fat to twice can, if too big and sour, that is hair. 3.
