Introduction:

Today, when I went to buy vegetables, when I saw the green leaves of zongzi sold, I immediately thought of the fragrance of zongzi. Although there have been various flavors of zongzi sold in the market for a long time, and I have eaten them several times, I always feel that it is not as fragrant and authentic as my own home. I bought two Zongye and said that I would do it and wrap them up
Production steps:
Step 1: wash the glutinous rice and soak it in water for 3-4 hours
Step 2: cut the hind leg meat into one inch square pieces, and marinate it with soy sauce, salt and sugar for 3 hours
Step 3: red beans, peanuts appropriate amount (like to eat beans can put more) first soak in water for about 3 hours, and then mix well with the soaked glutinous rice, add appropriate amount of sugar, salt, monosodium glutamate, soy sauce, make slightly salty and sweet, and then add 2-3 grams of edible alkali to mix well
Step 4: soak the leaves in water for a while and clean them
Step 5: when packing, first put a spoonful of mixed rice, put a piece of meat on the top, then put a spoonful of rice on the top, press it with your hand, then poke it with a chopstick for several times, let the rice compact, and finally wrap it up
Step 6: trim the edges and corners of the wrapped dumplings with scissors and put them into a pressure cooker. Soak the dumplings in water. Turn the fire from high to low for 1 hour. Turn off the fire and let it cool before opening the lid
Step 7: don't put it too full, no more than 4 / 5. Bring it to a boil on high fire, and then simmer on low fire for no less than 1 hour. Don't rush to open it after turning off the fire. Let it cool and then open the lid. Zongzi will taste more glutinous
