Production steps:
Step 1: prepare the ingredients, sugar, milk, cream, three egg yolks and two whole eggs (one egg yolk is broken by accident, slightly ugly), coffee powder, vanilla essence (no need)
Step 2: divide the sugar into two parts, one is 125g, pour one part into the egg liquid and stir well
Step 3: pour another portion of sugar into the skillet, add about 50 ml of water, and cook it into Caramel (Note: do not stir during the process, but gently shake the skillet)
Step 4: pour the milk and cream into another pot and heat
Step 5: add a small amount of coffee powder
Step 6: add two or three drops of vanilla extract
Step 7: do not need to boil, heat until the coffee powder completely melts, then leave the fire, take it to one side and let it cool slightly. The cooked coffee should be very light brown
Step 8: when the sugar water is boiled to a thick caramel, it can be removed from the heat. Pour it into the mold immediately. Don't pour too much, just lay a layer on the bottom. (the newly cooked caramel is very hot, be careful. The caramel with suitable consistency should be hardened soon after pouring it into the mold. If the caramel is too thin, you may need to consider boiling it again, with more sugar and less water.)
Step 9: after filling the bottom with caramel (the amount of materials used this time is so large that even my heart mold is out)
Step 10: pour the coffee and milk into the egg liquid after it's a little cold. Pay attention to pour slowly and stir while pouring
Step 11: after the caramel is completely set, the milk and egg liquid can be injected into the mold
Step 12: put in the baking tray
Step 13: fill the pan with half hot water
Step 14: bake in the oven for 40 minutes
Step 15: my molds are too small, and there is still a lot of milk and egg liquid left. I don't want to waste it, so I pour it into a small bowl and steam it in a steamer for 30 minutes. It's also delicious, that is, the steamed pudding will have a lot of water, but it doesn't affect it
Step 16: take out the baked pudding and let it cool for a while, then refrigerate it for two hours (it's a bit long, but the taste will be better)
Step 17: take the frozen pudding out of the refrigerator and use a knife to make a circle along the bowl wall
