Production steps:
Step 1: remove the head and tail of the hairtail, cut off the fins and clean up the internal organs; especially the blood under the film in the belly must be washed, which is the most fishy; keep the white scales, which have high nutritional value and won't be too fishy; cut them into sections and marinate them with cooking wine and onion ginger for more than 30 minutes;
