Soft sweet and sour Cranberry cake
Introduction:

Production steps:
Step 1: turn the yeast to the moon.
Step 2: pour yeast water into a bowl filled with flour, baking powder and sugar.
Step 3: add warm water, add water little by little, the water absorption of flour will be different. The final consistency can't make a dough. It feels a little thinner.
Step 4: apply oil on the 6-inch cake mold to facilitate the cake peeling.
Step 5: pour the batter into the cake mold, cover it with plastic film or curtain, and wait for fermentation. I started making it at 9:00 p.m. and steamed it the next morning, so I didn't worry. I only put 1 gram of yeast. If I was in a hurry, I would put 3 grams of yeast.
Step 6: add dried cranberries to the fermented batter the next morning. In fact, it was already fermented at 1 o'clock in the night. I just got up at that time and had a look at it by the way. When it was finished, I put it into the refrigerator immediately.
Step 7: put into the steamer, boil the water and steam for 25 minutes.
Step 8: out of the pot.
Step 9: it's a little hollow in the middle. Other places are very nice and beautiful.
Step 10: scrape a circle along the cake film with a plastic knife and demould it smoothly.
Step 11: cut a few knives to make it easier to eat.

Warm water: 160-180g
Baking powder: 1g
Yeast: 1g
Cranberry: moderate
Note: if you don't add sugar to the cake, it's very sour. The cake I made from my mom is sour. So like to eat sweet friends, can add more sugar, add 60 grams or so.
