Production steps:
Step 1: soak the rice for more than 8 hours, soft enough to crush by hand. Add 2 tbsp water and beat with blender for 1 minute to form fine particles (it may not be seen in the picture)
Step 2: add flour and salt, mix and knead into dough, wake up for 30 minutes.
Step 3: sprinkle some flour on the panel to prevent staining, add dough and roll it into large slices. Try to be thinner. It's crisper.
Step 4: press the mold into various shapes
Step 5: insert a small hole in the surface with a fork so that the heat can come out when frying
Step 6: heat the pan, add proper amount of vegetable oil and medium heat, deep fry the dough for about 4 minutes, and remove when the surface turns golden
Step 7: add seasoning and mix
Materials required:
Jiangmi: 100g
Flour: 120g
Water: 2 tbsp
Salt: 0.5 TSP
Chili powder: appropriate amount
Cumin powder: right amount
Vegetable oil: right amount
Note: when frying, don't worry too much. Fry slowly and turn it over every 20 seconds. It must be thoroughly fried to make it crispy, and turn it over constantly to make it crispy.
