Production steps:

Lard: 3 tbsp
Soy sauce: 3 tbsp
Salt: a little
Chicken essence: appropriate amount
Note: don't flush cold water after the noodles are cooked. To drain the water, pour in the sauce while it's hot and mix well. Hot noodles will absorb the sauce. The shallot pastry should be sprinkled last, or it will be soft. If you can't buy shallot pastry, don't add it. Fried onion with lard is good enough.
